Remove the pits from dates and soak them in hot water for several minutes. When the dates are softened, drain, saving the water just in case, and place them in a food processor.
Add the other ingredients to the food processor and blend until mixture turns into a dough-like consistency. Add 1 or 2 tablespoons of saved date water if the mixture is too dry.
Roll into balls, then roll the balls in almond flour or shredded coconut.
Store energy balls in an airtight container in the refrigerator until serving.
Notes- Yes, you'll add the entire 1/2 of a lemon to the food processor with the other ingredients. It only takes about 10 minutes to make them, and when stored in the refrigerator, they keep for up to 2 weeks.
